Biscuits with Colmurano Paccucce

The “paccucce” are dried segments of Rose Apple from the Sibillini Mountains marinated in Vino Cotto – mulled red wine. The Rose Apples are characterised by an acidulous sugary pulp, with an intense and aromatic scent. The pulp is firm and crisp, with bright red colour on the sun-exposed side of the fruit.
A short pastry covered with almonds encases the Paccucce in a tasty casket.

Ingredients:

• type “0” flour
• butter
• sugar
• egg yolk

Filling:

• apple preserve (70% apple pulp, sugar, starch, potassium sorbate preservative)
• antioxidant (ascorbic acid)
• acidity regulator (citric acid)
• aroma
• 20% rose apples
• vino cotto (mulled wine)
• almonds
